1 cup of coffee
1½ to 2 teaspoon tapioca starch*
20 ml of water
1 tiny pinch of Himalayan Salt
*Option: Food starch (organic)
For children: Instead of coffee, use orange juice. For more sweetness, season with coconut blossom sugar. Almost all fruit juices are fine, as long as you squeeze the juice fresh!

1. Prepare your coffee. Taste it the way you love it. Pour the coffee into a small saucepan and bring it to a boil.
2. Add the tapioca starch to a small cup, mix with about 20ml of water and stir with a whisk (metal) into the boiling coffee. It's like thickening a sauce.
3. When the liquid is thick enough, pour into a decorative dessert glass and refrigerate for 2 hours.
Before serving, the "Cold Coffee Pudding" can be garnished with fruit, nuts, etc. or refined with the ice cream of your choice.
Ideal on hot days, to take to the office or workplace - and suitable for freezing!
