325 grams of gluten-free flour
50 grams of potato starch
1 packet of dry yeast (or ½ cubes of fresh yeast)
180 milliliters of lukewarm water
180 milliliters of lukewarm vegetable milk (eg rice milk)
2 tbsp coconut oil
1½ teaspoon coconut blossom sugar
1 tsp Himalayan salt
2 tsp guar gum
2 teaspoons of tartar (baking powder)
some water
1 beaten egg to brush
Sesame or flax seed meal to sprinkle

With 1 tsp xanthan gum, instead of guar gum, the rolls should be even fluffier!
Put the flour, potato starch, coconut blossom sugar, Himalayan salt, guar gum and tartar in a bowl and mix.
Mix water and milk (both lukewarm) and dissolve the dried yeast (or fresh yeast) in the lukewarm liquid, add to the bowl with the coconut oil and knead into a smooth dough.
Lay out the baking sheet with parchment paper, well-floured hands and form about 6 balls (slightly flatter for burger rolls) out of the dough. Always good at flouring your hands! If the dough sticks too much, always flour your hands.
Brush dough balls with water and leave to rise in a warm place for about 60 minutes.
Preheat oven to 180 degrees top and bottom heat.
Now sprinkle the batter balls with whisked egg, sprinkle with sesame or linseed and bake for about 30 minutes.
